Gluten-Free Pasta Salad 2 Ways

First off, I love me some pasta. Carb heaven you know what I’m saying?? But our tummys often don’t when most dishes are filled with dairy, gluten, and rancid oils. Especially when it comes to a summer fave — the pasta salad!

Now, growing up my mama’s best friend Cyd always made this amazing pasta salad for get togethers when I was growing up. For months I was craving it so when we were getting ready for my sister Nikki’s bridal shower, I knew I wanted to make a pasta salad but healthier and more tummy tolerable for anyone with sensitivities.

For the shower I went for a greek pasta salad but of course now I’m on a roll and I decided to make one batch and break it into two different versions for a little easy meal prep. This was made so super easy thanks to Mother Raw’s dressings and dips. Two salads — veggie Mediterranean pasta salad, and the next an epic creamy classic pasta salad — something for everybody!

Roasted Mediterranean Pasta Salad

Serves 2-4

Ingredients:

  • 1/2 yellow zucchini chopped

  • 3/4 cup small diced egg plant

  • 1/3 cup sliced red onion

  • 1/3 cup sliced red pepper

  • 1/2 cup sliced mushrooms

  • 1/3 cup sliced calamata olives (pitted)

  • salt & pepper to taste

  • 2 cups GF pasta (I used rotini)

  • 1/4 cup chopped basil

  • 1/4 cup Mother Raw Maple Fig Dressing

    Recipe:

    1. Heat skillet over medium-high heat, spray with avocado oil, and add all veggies (minus olives) to pan. Cook until caramelized.

    2. Cook all GF pasta according to box directions, drain, rinse, and set aside to cool.

    3. Combine veg & pasta in mixing bowl. Add Mother Raw Maple Fig dressing, olives, and basil. Season with salt and pepper to taste.

    Enjoy!

Classic Creamy Pasta Salad

Serves 2-4

Ingredients:

  • 1/2 cup cucumbers, sliced in quarters

  • 1/3 cup diced red onion

  • 1/3 cup diced red pepper

  • 3/4 cup sliced heirloom cherry tomatoes

  • salt & pepper to taste

  • 2 cups GF pasta (I used rotini)

  • 1/4 cup chopped parsley

  • 1/4 cup Mother Raw Ranch Dip

Recipe:

  1. Cook all GF pasta according to box directions, drain, rinse, and set aside to cool.

  2. Combine all ingredients in mixing bowl, gently stir until completely covered.

  3. Optional — Top with sheep’s milk feta or goat milk cheddar cheese to add to the epic creamy dreaminess.

  4. Enjoy!
