Watermelon Feta Mint Salad
Looking to beat the heat this summer? I love love love watermelon — I mean, who doesn’t?? I think it’s just so fresh and should totally be the star of the show more often at meals. I adore different types of salads in the summer since it’s just so light but satisfying in the warm months.
I was looking for a light yet flavour packed side to pair with my bunless burgers this week and I remembered this super simple side. This one is perfect to bring to barbecues, wow a date, and stay on track with your goals.
Ingredients:
2 cups of watermelon, cubed
1/2 cup mint
1/2 cup of goat or sheep feta
2 tbsp balsamic glaze
1/4 cup finely sliced red onion
pink himalayan salt & pepper to taste
How To:
Rip off mint leaves from stem, tearing large leaves in twos or threes
In a mixing bowl, combine all ingredients except for balsamic glaze together gently.
Divide amongst plates, top with balsamic glaze drizzle (roughly 1 tbsp each) -- Enjoy!
