High Protein Healthy BuckEyes
One of my favourite combos is chocolate and peanut butter. But since I can’t eat dairy, or most nuts, I don’t often get to have that pristine flavour combo. But in true Angie fashion, I stepped outside the box a little and came up with these Paleo, high protein, sun butter bites — that taste just like a buck eye !
Ingredients:
1 cup sun flower seed butter
1/3 cup pure maple syrup
1 tsp vanilla
1 pinch pink himalayan salt
3 scoops Vital Proteins Vanilla Coconut Collagen Whey
2 bars Dark Chocolate
2 tbsp coconut oil
Recipe:
Mix together all ingredients except chocolate and oil until smooth. Using an tbsp scoop out batter and form small balls, place on parchment lined tray. Freeze for 20 mins.
In a double boiler, melt down chocolate and coconut oil, set aside.
Remove tray from freezer, roll each scoop of batter into a smoother ball if needed, dip in chocolate with fork to coat completely and place on tray.
Freeze for 1 hour, enjoy!
Store in fridge or freezer for up to 1 week.
