Chocolate Spelt Brownies
By this time, we all know i have a sweet tooth, especially when it comes to chocolate. I also was desperately craving some baked goods (even though it’s not my forte) and thought how about trying out a spelt version of my favourite brownies?? I added in some chocolate protein to help manage my blood sugar and keep me fuller longer as well. I hope you guys love this recipe as much as I do!
Ingredients:
1.5 Cups of Spelt Flour
1 Cup of Vital Proteins Dark Chocolate Protein Powder
1/2 Cup of Cacao
1 1/2 tsp Baking Powder
1 Can Full Fat Coconut Milk
1 Cup Pure Maple Syrup
1 Tablespoon of Vanilla Extract
Shaved coconut (for the top)
1/2 a bar of Dark Chocolate, broken into chunks
Recipe:
Pre-heat oven to 350 degrees Fahrenheit.
Add flour, protein powder, cocoa and salt into a bowl and mix well. Make a well in the flour and then pour coconut milk in.
Mix well until all combined. If it is looking dry, add a little more coconut milk. Stir in chocolate.
Pour into a deep lined baking tray and spread evenly from edge to edge.
Place into the oven for 25 minutes. Using a fork or a skewer, place into the middle of the brownie and if it comes out clean, its ready! Add shaved coconut to top and let brownies cool.
Slice and EAT!
